Properties

  • Very soluble in water
  • Increase the product's volume.
  • Widely used in gluten-free products. (Wheat flour-containing products)
  • The percentage of volume used is lower than for other substances (Low dosage).
  • Improved viscosity when combined with Guar Gum or CMC.
  • Very low calorie content.

Function  

  • Make the product thicker (Thickening Agent).
  • Increase the product's strength and stability (Stabilizing Agent).
  • Increase the product's volume (Bulking Agent).
  • Aid in the suspension of the mixture (Suspending Agent).
  • It is frequently used in conjunction with CMC and Guar Gum.
  • Enhance the texture of the product, for example, dairy products and ice cream will have a soft texture.
  • Prevent oil and water separation (Emulsifier Agent).
  • Provide a sticky structure.
